Fried Summer Squash Patties

2 c. yellow summer squash, diced

¼ c. flour

1/3 c. cornmeal

1 sm. onion, diced

1 egg,

Salt and pepper to taste


Mix all ingredients well. Make into small patties (2 to 3 inches in diameter) and fry on medium heat until golden brown. Place on a paper towel to drain. Serve hot.
