Wayne County Homemaker Recipe – Buttermilk Scotch Date Cake by Mollie Koontz

BUTTERMILK SCOTCH-DATE CAKE

1 c. chopped dates

1 ½ tsp. baking soda

1 ½ c. boiling water

Cream ¾ cup shortening and 1 cup sugar. Add 2 eggs and beat well.  Add to date mixture.

Sift:

1 ¾ c. flour

¾ tsp. baking soda

¾ tsp. salt

Stir into another mixture.

Pour in a greased 9×12 inch pan and sprinkle over batter:

¼ c. sugar

1 c. chopped nuts

1 (6 oz.) pkg. butterscotch chips

Bake at 350 degrees for 45 minutes.
