Wayne County Homemaker Recipe – Oklahoma Jambalaya by Vickie Hill

OKLAHOMA JAMBALAYA

3 onions, chopped

2 c. pork, cubed

1 lb. smoked sausage, sliced

2 c. chicken, cooked

1 ½ c. long grain rice

3 tsp. salt

1 tsp. oregano

½ tsp. Tabasco sauce

1 Tbsp. Worchestershire sauce

4 c. water

Sauté onions until golden brown in vegetable oil.  Place in a large pan.  Brown pork and sliced smoked sausage.  Put in a large pan with onions; add chicken, salt, oregano, and water.  Bring to a boil.  Add rice; stir.  Cover and simmer for 30 minutes.  Add Tabasco sauce and Worcestershire sauce to taste.
