CHICKEN WITH SAUCE
8 halved chicken breasts, deboned
3 Tbsp. oil
3 Tbsp. butter
3 Tbsp. flour
4 Tbsp. chopped green onions
Salt & pepper to taste
½ c. white wine
1 (4 oz.) can mushrooms with juice
2 Tbsp. parsley
Brown chicken in cooking oil and butter. Remove from skillet. Add flour to fat in skillet and stir until dissolved. Add broth and wine; cook until thickened. Add mushrooms and juice, parsley, onions, salt, and pepper. Put browned chicken in 9×13 inch dish. Pour sauce over it. Bake at 350 degrees until chicken is done. Serve with rice.
