Wayne County Homemakers Recipe – Sweet Potato Casserole by Colleen Ramsey

SWEET POTATO CASSEROLE

1 (16 oz.) can of sweet potatoes

1 stick margarine

2 eggs

1 c. sugar

1 c. evaporated milk

Topping:

1 c. nuts

1 c. brown sugar

½ stick melted margarine

1/3 c. flour

Heat sweet potatoes in liquid (save liquid). Drain potatoes and mash. After mashing, mix sugar, margarine, evaporated milk, and eggs.  Add to mashed potatoes.  If dry, add a little more liquid. Put into greased square baking dish. Mix ingredients together for the topping.  Pour over potatoes.  Bake at 350 degrees for 30 to 40 minutes.
