Wayne County Homemaker Recipe – Apricot Glazed Sweet Potatoes by Cassie Lester


3 lbs. sweet potatoes, cooked, peeled, and cut into 1-inch pieces

1 c. brown sugar

5 tsp. cornstarch

¼ tsp. salt

½ tsp. cinnamon

1 c. apricot nectar

½ c. hot water

2 tsp. grated orange peel

2 tsp. butter

½ c. chopped pecans

Place sweet potatoes in a 13 x 9 x 2-inch baking dish and set aside.  In a saucepan, combine sugar, cornstarch, salt, and cinnamon. Stir in apricot nectar, water, and orange peel.  Bring to a boil stirring constantly.  Cook and stir 2 minutes more.  Remove from heat; stir in butter and pecans.  Pour over sweet potatoes.  Bake, uncovered at 350 degrees for 20-25 minutes or until well heated.
