Wayne County Homemaker Recipe – Sharon’s Chicken Noodle Soup by Sharon Cox

SHARON’S CHICKEN NOODLE SOUP

1 whole chicken

2 large carrots

2 med. onions

2 stalks celery

¾ bag No Yolk noodles

Chicken bouillon (optional)

Cook chicken in salted water, enough to cover chicken well.  When fork tender, remove and cool to the touch.  Remove all skin, fat, and bone.  Pull apart with fingers.  Dice onion and celery, grate carrots, and add each to the reserved liquid.  Simmer while finishing the chicken.  Add No Yolk noodles (these won’t cook all to pieces) and chicken back to the pot.  Use salt, pepper, and chicken bouillon to enhance flavor if needed.  I sometimes add tender yellow and zucchini squash diced fine with onions.
