HAMBURGER ENCHILADAS
½ c. onion, chopped
4 T. butter
¼ c. flour
2 c. beef broth
1 tsp. beef bouillon
8 oz. sour cream
3 c. fried hamburger
2 c. cheddar cheese, shredded
1 (4 oz.) can green chilies, drained
1 tsp. chili powder
10 to 12 flour tortillas
Sauté onion melted butter. Stir in flour, beef broth, and bouillon. Cook until thickened. Remove from heat. Add sour cream. In a mixing bowl, combine hamburger, 1 cup sauce, 1 cup cheese, green chilies, and chili powder. Mix well. In each flour tortilla, place 2 tablespoons of meat mixture. Roll up and place in baking dish. Pour remaining sauce over top. Top with remaining cheese. Bake at 350 degrees for 25 minutes.
