ROGER’S MISSISSIPPI QUICK AND EASY
(Red Beans & Rice)
1 lb. ground beef, browned
1 lb. Cajun sausage, sliced thin and browned
1 bell pepper, sliced thin and cooked with sausage
1 or 2 cans of pinto beans with liquid
1 or 2 cans of red kidney beans with liquid
1 pkg. taco seasoning mix
1 pkg. onion soup mix
1 can tomatoes with chilies
½ – 1 tsp. crushed red pepper
1 jalapeno pepper, diced (optional)
The amount of beans you add depends on how well you like beans. Put all the ingredients in a kettle and simmer until flavors are blended. Stir and add liquid as needed. Serve with rice.
