Wayne County Homemaker Recipe – Strawberry Divinity by Georgia Burton


3 c. sugar

¾ c. white corn syrup

¾ c. water

2 egg whites (room temp.)

1 (3 oz.) pkg. strawberry gelatin

½ c. flake coconut, optional

1 c. chopped pecans, optional

Combine sugar, corn syrup, and water in a saucepan.  Bring to a boil stirring constantly to dissolve sugar.  Remove crystal from the side of the pan with a damp cloth.  Cook to hard boil stage, 252 degrees.  Remove from heat and let stand while you prepare egg whites.  Place egg whites in a large bowl and beat until foamy.  Add gelatin and beat until soft peaks form.  Pour in syrup in a fine line beating constantly.  Beat until candy loses gloss and will hold shape.  Fold in coconut and nuts.  Cut when firm.  Other flavors of gelatin may be used.
