BEETS IN ORANGE SAUCE
1 (1 lb.) can beets
1 Tbsp. cornstarch
¾ tsp. salt
1 Tbsp. sugar
¼ c. orange juice
2 Tbsp. lemon juice
½ tsp. grated orange peel
1 Tbsp. butter
Drain beets, reserve liquid. Pour liquid into a measuring cup and add enough water to make ½ cup liquid. Combine cornstarch, salt, sugar, and orange juice in a 1-quart bowl. Stir in beet juice liquid. Cook for about 3 minutes, until the mixture, comes to a boil. Add lemon juice, orange peel, and butter. Stir to melt butter. Add beets. Cook for about 3 minutes or until beets is hot.
